I COULD EAT STEAK STRAIGHT OUT OF BED IN THE MORNING. I LOVE STEAKS THAT MUCH.
Generally, I like my steak simply with a bit of salt and pepper. But this recipe tantalized my curiosity. There are many versions of a coffee-marinated steak. Most of them are too sweet for me, so I decided to add a few spices.
HERE’S MY TAKE:
INGREDIENTS:
Serves 4-5 comfortably.
- 1.5 small shallot, chopped
- 3 garlic cloves, chopped
- 1.5 cup strong coffee, room temperature (brewed or instant)
- 3/4 cup balsamic vinegar
- 3/4 cup Dijon mustard
- 1/4 cup (packed) light brown sugar
- 3 tablespoons olive oil
- 1 heaped teaspoon cayenne (optional)
- 1.5 teaspoon freshly ground black pepper plus more
- 2.5 pounds skirt steak, cut into 4-6 pieces depending on the size you want to serve

METHOD:
- Whisk coffee, shallot, garlic, vinegar, mustard, brown sugar, oil, and 1 teaspoon pepper in a bowl.
- Put half the steak pieces into a ziplock or a resealable plastic bag. Pour enough marinade into the bag to cover the steak comfortably. Seal the bag and move the steak around to coat fully with marinade. Let sit at room temperature 1 hour. If there’s any remaining marinade, set it aside.
- Prepare grill for medium-high heat. Remove steak from marinade; discard used marinade. Season steak with salt and pepper and grill, turning and basting often with reserved marinade, 3-4 minutes on each side for medium-rare. Let rest 10 minutes before slicing.
- Serve the steak with a bit of the marinade on the side. It’s a great dipping sauce.
Don’t expect an over-powering coffee flavor. You should taste just a hint of it!
